La experiencia es ESPECTACULAR, todo lo que os podáis imaginar, probablemente lo supere. Teníamos miedo de que todos los platos, como salía del mar, supiesen a lo mismo, y no, todo tiene un sabor increíble, cuidan todos los detalles, tanto en la comida como en el trato, no hay nada malo que decir.El servicio muy atento, sí es cierto que al principio había una persona que estaba discutiendo con un camarero, cosa que no nos pareció normal, pagamos mucho dinero para que nos demos cuenta de que alguien está haciendo algo mal (nosotros ni lo percibimos).Cuando pedimos el maridaje nos dieron la oportunidad de pedir medio maridaje por persona, cosa que lo agradecimos ya que no somos personas que sepamos apreciar el buen vino, pero aún así, hicieron una selección de vinos que nunca nos hubiésemos imaginado que un vino podía tener ese sabor.En definitiva es una experiencia para vivirla alguna vez en la vida, el precio evidentemente es muy elevado, pero no nos arrepentimos en absoluto, las tres estrellas son por algo.Cuando te sientan en la mesa, te dan un cuadernillo para saber que es lo que se ha comido (muy útil, ya que es mucha información la que te dicen y es imposible que retengas todo).Cuando llegas al sitio y aparcas el coche, el aspecto es malo, ya que está en un sitio un poco abandonado, pero por dentro no tiene nada que ver.
Es el mejor restaurante en el que he estado. Me encantó la propuesta de Ángel León. Cada paso, cada historia, cada detalle todo en consonancia con un menú que deja boquiabierto a cualquier paladar. Un menú no solo creado para disfrutar sino también para conocer y aprender. Sabores conocidos y nuevos se entrelazan en esta experiencia para hacerte viajar por el humilde y encantador Puerto de Santa María. Sin duda un lugar para repetir, donde cocina y servicio, con esa gracia y ese arte que caracterizan al lugar, te harán disfrutar de cada momento. Todo ello con un tremendo sabor a mar. Y aunque no es algo que la mayoría de los mortales nos podamos permitir todos los fines de semana, le daría esa oportunidad, al menos, una vez al año, que no hace daño.

Fantástica experiencia. Ha sido nuestra primera vez en un tres estrellas y la experiencia, a parte de dejarnos con gran sabor a mar en el paladar, ha sido insuperable. Tanto el trato, el servicio como la degustación fueron de 10.
Wow, simply blown away. From start to finish this was an unforgettable artistic experience. Beautiful restaurant and involvement as you move through the meal. Most attentive waitstaff Ive ever seen. And the food was not only creative, but delivered each time with something crazy and new. Worth a trip for sure.
Just came out of Aponiente (2022, water planet menu). All family members felt a lack of words to describe this overwhelming experience… However; I’ll try to share a personal narrative.. Somehow, it was our best restaurant experience ever, whithout any doubt, even if we’re used to Michelin’s 3 stars… Chef Leon and his crew purpose sea creativity, emotions and pleasure at their upermost level : what an extreme bliss !!! You’d better try Aponiente. Especialy if you desire to rock your world and everything you know about sea food…

Beyond anything I have ever experienced food-wise before, eating lunch here was one of the best moments of a life already less ordinary. I am sure all of the superlatives have been done by now, but let me add this: The dedication to being the very best you can be, the commitment and passion that permeate every aspect of the site and the dining experience, are testimony to what an absolute triumph this place is. An ode to taking life in new, previously unexplored directions, and what those who are brave enough to walk that path can achieve.
Amazing fine dining restaurant! The focus is on local and sustainable seafood, every dish (except for a couple of dessertsfeatures seafood! The service was top tier and its ready to see why this place has 3 Michelin stars.

Unfortunately, I did not enjoy this restaurant at all and would definitely not recommend itWhen a restaurant has 3 Michelin stars one has certain expectations so I was greatly disappointed with the dishes and the service. In comparison with other Michelin starred restaurants this one did not seem up to international standards and sadly attention to detail was lacking throughout the meal.The staff was inattentive and unfriendly, and restaurant is in a rather unsafe shady part of town.If you have 200euros to spend I would suggest dining elsewhere to avoid our disappointment

Great place with amazing food. A lot of thinking outside the box going on here. The wine pairing was a bit difficult for me to understand, but the fantastic food compensated for that!
Fantastic experience, all is excellent in this temple of gastronomy. Impressive location, all makes perfect sense after having learnt about the origins and the philosophy of the chef and his project. All dishes are simply an achievement of creativity and innovation, perfect texture, excellent product.
Although I loved the great location & service of this place and am normally very happy to experience experimental cuisine (Dani Garcia, Massimo Bottura, Atelier Krenn etc), this was the most difficult food I have ever experienced!!! I was very unimpressed by the food, as I felt like it was experimental to a point, which made you feel disgusted by the texture and taste. I was very happy when the dinner was over, after having spent a lot of money! In addition, I thought the taste and texture throughout all the courses was very similar. Everything was slimy, the use of algae powder was used in about every dish, butter and bread!! The dessert was a joke in itself- goat yogurt with syrup presented in the most basic way. Lastly, I thought the use of fat was so prominent, that one could not enjoy the sea food at all: mortadella and sausage made from fish, followed by bacon of fish etc. etc. On this level, food should be an experience but not a disappointment!.

I cant but agree with the best reviews posted here. So I want to highlight an aspect not mentioned previously. Aponiente is not a restaurant. Aponiente is the tip of an iceberg that will literally contribute to improving the culinary experiences of space travellers. Let me show it to you. Chef Angel León is a driving force much like the force generated long ago by the magnificent 18th-century tidal mill where Aponiente is located. He followed Ferran Adriàs motto of synergizing cuisine and science, but he has put it on another level since he not only investigates new techniques of elaboration/preparation but also in new methods to efficiently extract, honour and serve any marine product. He is especially focused on sustainability. Inevitably, that has turned his attention to the first element of the trophic chain: plankton. He has managed to create an explosion of sea flavour with a sustainable product that also turns out to be a great source of energy. That is the perfect candidate for interplanetary travel, as it could easily produce food and energy based on it. In other words, Chef León is already saving future interplanetary travellers from boring food by creating such beauty and explosion of flavour like plankton butter, which amazed me. Curiously, the words for Planet and Plankton are related as both arose from the Ancient Greek Word for Errant.Thanks for an unforgettable experience.

Great experience, a must when in Cadiz. Incredible food and service; however, in my opinion, its slightly below other 3 stars like DiverXo or Arzak. I enjoyed the creative touch with seafood, but missed a classic touch of a traditionally cooked fish in the menu. Didnt enjoyed the peppers made dessert, but coffees and chocolates were very good. The wine pairing is worth it.

First time trying a 3 Michelin stars restaurant and what can I say... It was unreal. The attention to detail, the venue, the incredible service and overall, the food and the wine. We went for the full tasting menu with wine pairing and there wasnt a single thing we werent impressed by. Totally recommended to have an incredible culinarie experience.

Amazing experience!Beats all previous restaurants, concerts, theme parks and man made sights.Note a few preconditions: you must like fish and sea food. You must be open minded to try what you never thought you would eat, trust me this team make miracles. A wine lover enjoys it more than if you stick to water.If you fulfill these conditions you will have a very pleasant and joyful three hours to talk about for a long time!The combination of flavor, texture, serving and choreography of every dish is hard to describe in words. Everything is very well and thoughtful put together to tickle every sense in your body. Even the amount of 17servings were pleasant, at other restaurants with high rank you leave as a stuffed man but here you float away with a big smile :)Finally I would like to recommend the lunch seating, then you will enjoy how the tide changes the landscape around the old mill.
AponientePURE ENTERTAINMENT: this restaurant is pure over the top entertainment. Talk about telling a story, these people know how to tell stories and not only one, but many. As for the food, I like well thought out simple food made with great ingredients. The great ingredients were perhaps here but the food was not. Forget the fish sausages which was rather disturbing and tasted horrible but what topped it all with out a shadow of a doubt, was the restaurant biologist.... REALLY? Well worth the 300us per person in terms of entertainment value but this is about it. The best moment of the "experience" was leaving and heading back to the hotel.
the courses were served far too quickly one after the other. The taste of the dishes was sobering boring. no waiter ever asked if the food tasted good and at the end was cleared prematurely even though not completely eaten. all just a big show without lovingly prepared food. all in all a very disappointing visit apart from the ambience.

One of the best meals of our life. The setting is gorgeous, the staff professional and knowledgeable, the food surreal at times, and everything brought together in perfect harmony. Definitely worth the 2-hour drive.

Excellent high quality seafood place. Modern cuisine with some outstanding dishes. Great service and great wine pairings with each dish (some 18 or so .... Worth a trip to el Puerto de Santa Maria in Cadiz. The restaurant is located in an old tidal water mill that has been beautifully decorated. A top restaurant.
